Vegetarian and Less-meat Meals

   
  • 1 Slice Bread
  • 1/4 pint Milk

Soak in large pot for 5 mins. then bring to boil.

 
  • 1/2 oz butter
  • Pepper
  • Salt
  • 2 oz Grated Cheese
  • 1 Egg Yolk

Mix the above ingredients together.

Beat egg white(s) till stiff and fold into mixture. Pour into greased pie plate and bake at 180 degrees for 20 mins.

It should rise high in the dish.

 

Can add onions or cooked bacon bits at beginning before adding the egg whites.

  • 4 large potatoes, peeled and sliced
  • 1 small onion, finely chopped
  • 1 1/2 cups shredded Cheddar cheese
  • 1 teaspoon margarine
  • salt and pepper to taste
 
  1. Layer the potatoes, onion, cheese, salt and pepper into a microwave safe casserole dish. Once finished layering, place 1 teaspoon of margarine on the top of the uppermost layer. Cover and cook in the microwave oven on HIGH for 10 minutes.
  2. Remove the dish from the microwave and stir before cooking for another 10 minutes or until done. Stir well and serve.
 
  • 1 tablespoon vegetable oil
  • 1/2 large onion, sliced
  • 1/2 red apple, cored and sliced
  • 1 pinch curry powder
  • 1 cup water
  • 2/3 cup brown rice
  • 1 teaspoon dark molasses or treacle
  • 1 small banana, sliced
  • 1 tablespoon unsweetened flaked coconut
 

Heat the oil in a saucepan over medium heat. Add the onion and red apple; cook and stir until onion is transparent. Season with curry powder, and stir in the water. Add the rice and molasses, cover, and cook over low heat until the rice is tender, and water has been absorbed, about 30 minutes. Mix in the banana, then sprinkle the coconut on top. Heat through for a moment over low heat before serving.

   
  • 1 large russet potato
  • 1 tablespoon butter or margarine
  • 3 tablespoons shredded Cheddar cheese
  • salt and pepper to taste
  • 3 teaspoons sour cream
 
  1. Scrub the potato, and prick several time with the tines of a fork. Place on a plate.
  2. Cook on full power in the microwave for 5 minutes. Turn over, and continue to cook for 5 more minutes. When the potato is soft, remove from the microwave, and cut in half lengthwise. Season with salt and pepper, and mash up the inside a little using a fork. Top the open sides with butter and 2 tablespoons of cheese. Return to the microwave, and cook for about 1 minute to melt the cheese.
  3. Top with remaining cheese and sour cream, and serve.
 

Mini Vegetable Gratins

Servings: 4

Ingredients

  • 30 unsalted butter
  • 1 medium onion, finely chopped
  • 35g plain flour
  • 500ml full fat milk
  • 200g Cheddar cheese, grated
  • Half of a cauliflower
  • Half of a broccoli bunch
  • 1 courgette
  • 4 rashers streaky bacon
  • 8 cherry tomatoes, halved

Method

  1. Heat the butter and fry the onion until soft. Add the flour and cook for a minute.
  2. Gradually whisk in the milk and stir over a gentle heat. Add 150g of the cheese, stir and remove from the heat.
  3. Cut the veg into bite-size pieces. Steam the cauliflower for 4 mins, then add the broccoli and courgette and steam for another 4 mins.
  4. Divide the veg between four mini ovenproof dishes, add the sauce, sprinkle over the remaining cheese and grill until golden.
  5. Grill the bacon and tomatoes until crispy. Chop the bacon and sprinkle over the gratins. Serve with the tomatoes and mini jacket potatoes or bread.
 
  • 8oz mixed nuts eg ground almonds and chopped walnuts
  • 2 onions finely chopped
  • 1 Tb olive oil
  • 3 oz breadcrumbs or cooked millet
  • 1 clove garlic
  • 1 tsp mixed herbs
  • 2 tsp yeast extract or mild curry powder
  • 8 oz tomatoes skinned and chopped, if canned, discard juice
  • 4 oz mushrooms chopped
  • 1 egg beaten
  • salt and pepper

Fry onions in oil until golden. Mix them with all other ingredients except egg. When mixed, add egg to bind all together. Tip into greased loaf tin or dish. Bake about 45 minutes at 180C or 350F.

 

Shepherd's pie - add 3 or 4 Tbs tomato juice or other liquid, top with mashed potatoes and bake. Burgers - shape cold cooked nut roast into burger shapes. Dip in flour and fry in oil until brown. Serve with onion and salad on buns.

Sausages - omit mushrooms. Shape cold cooked roast into sausage shapes, dip in flour and bake on a greased baking tray.

 

  • 1 onion
  • 5 eggs
  • 2 tsp oil
  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 cup milk
  • 1/2 tsp salt
  • 1 cup frozen mixed vegetables
  • 1 cup cooked diced potato
  • 1 cup grated cheese

Peel and finely chop onion. Fry in oil until golden and put into mixing bowl.

Beat eggs and add to onion. Add all other ingredients except cheese.

Pour into greased baking dish.

Sprinkle with cheese and bake 30 to 40 minutes at 180 C.

1/2 cup cooked chicken, tuna or bacon may be added if wished.

 
  • 1 onion
  • 2/3 cup TVP mince
  • 2 cups hot water
  • 1 egg beaten
  • 2 cups cooked mashed potatoes
  • 1/4 tsp curry powder
  • 1/2 tsp salt
  • 2 tsp oil
  • 2 Tbs oil extra
  • 2 Tbs flour

Soak TVP in in hot water. Peel and finely chop onion. Fry in 2 tsp oil until golden and put into mixing bowl. Drain TVP mince and put in bowl with all ingredients except oil. Mix and form into tablespoonful balls. Roll in flour and flatten. Fry in hot oil until golden. Serve with vegetables. Serves 4.

 

Rub 4g butter into 6oz wholemeal flour

Add:

  • 4oz grated cheese
  • 2 oz mixed nuts
  • 2 T sesame seeds
  1. Set aside
  2. Chop 1 1/2 lbs mixed root veges
  3. Melt 2oz butter in large pot
  4. Saute 1 onion
  5. Add prepared veges
  6. Cook 10 mins
  7. Stir in flour
  8. Then add:
  • 1/2 pt stock
  • 8 oz tomatoes
  • 1/4 pt milk
  • parlsey
  1. Bring to boil, cover, simmer 15 mins, until veges are tender
  2. Cover with topping
  3. Bake 350 degrees for 1/2 hr

  • 3 potatoes
  • 2 carrots
  • 1 parsnip or swede
  • 1 onion
  • 1 Tbs oil
  • 1 cup broccoli florets
  • 1 cup frozen peas
  • 1 cup grated cheese

Peel vegetables and cut in large chunks. Boil 10 minutes, then grate or food process finely. Peel onion, chop finely and fry in oil until light golden. Mix vegetables together and press into base of greased flan dish. Sprinkle lightly with salt and pepper. Bake at 180 C. about 30 minutes till light golden.

Cook broccoli and peas 5 minutes and sprinkle over flan. Top with cheese and bake a further 5 minutes until cheese is golden. Serve with crusty bread and soup or salad.

 
  • 3 sl Bacon, diced
  • 1 Garlic clove, finely chopped
  • 1/3 c Dry bread, cracker or -cornflake crumbs
  • 1 ts Italian seasonings
  • 1/4 ts Freshly ground black pepper

Place bacon in a 2-cup glass measure. Cover with paper towel. Stirring midway through cooking, microwave on high 3 1/2 to 4 1/2 minutes, or until bacon is crisp. Remove bacon and reserve.

Discard all nut 1 tablespoon bacon drippings. Add garlic and microwave on high 1 minute. Add bread crumbs, seasonings, pepper and reserved bacon; mix thoroughly. Sprinkle over cooked vegetables such as green beans, Brussels sprouts or broccoli. Or top a casserole during last 3-4 minutes of microwaving with mixture. Makes 2/3 cup.
