Nut Roast
- 8oz mixed nuts eg ground almonds and chopped walnuts
- 2 onions finely chopped
- 1 Tb olive oil
- 3 oz breadcrumbs or cooked millet
- 1 clove garlic
- 1 tsp mixed herbs
- 2 tsp yeast extract or mild curry powder
- 8 oz tomatoes skinned and chopped, if canned, discard juice
- 4 oz mushrooms chopped
- 1 egg beaten
- salt and pepper
Fry onions in oil until golden. Mix them with all other ingredients except egg. When mixed, add egg to bind all together. Tip into greased loaf tin or dish. Bake about 45 minutes at 180C or 350F.
1 Variations
Shepherd's pie - add 3 or 4 Tbs tomato juice or other liquid, top with mashed potatoes and bake. Burgers - shape cold cooked nut roast into burger shapes. Dip in flour and fry in oil until brown. Serve with onion and salad on buns.
Sausages - omit mushrooms. Shape cold cooked roast into sausage shapes, dip in flour and bake on a greased baking tray.
