Chocolate Mousse
- 225g/8oz plain chocolate
- 4 eggs separated
- 25g/1oz caster sugar
- 150ml/5floz whipping cream
- Melt chocolate
- Beat egg yolks, then whisk into chocolate. Let mixture cool to room temperature.
- Whisk egg whites and sugar to soft peaks. Whisk 1/3 of whites into chocolate. Gently fold in the rest of the egg.
- Whip the cream to soft peaks. Fold into chocolate.
- Put in serving glasses or dishes, chill to set.
